Makes about 10–12 egg rolls
Ingredients:
Elk Cheeseburger Egg Rolls:
- 1 tablespoon oil or butter
- 1 lb ground elk 1 small onion, finely diced 2 cloves garlic, minced 2 teaspoons Worcestershire sauce 1 teaspoon Dijon mustard (optional) Salt and black pepper, to taste 10-12 slices cheddar cheese
- 10–12 egg roll wrappers 1/2 cup finely diced dill pickles Oil for frying
Burger Dipping Sauce:
- ½ cup mayonnaise (or plain Greek yogurt for low calorie option)
- 3 tablespoons ketchup
- 2 tablespoons finely diced pickles
- 1 tablespoon yellow mustard
- 1 teaspoon white vinegar Dash of hot sauce (optional)
Instructions:
1. For the dipping sauce, whisk together the mayonnaise, ketchup, relish, mustard, paprika, and hot sauce in a small bowl until smooth. Set in the fridge until you are ready to serve.
2. Heat the oil or butter in a skillet over medium heat. Add the onion and garlic and cook until softened, about 2–3 minutes. Add the ground elk, Worcestershire, Dijon, salt, and pepper. Cook until browned and crumbly, then remove from heat. Let the filling cool slightly before rolling.
3. To assemble, place one egg roll wrapper on a flat surface with the corner facing you like a diamond. Place a slice of cheddar cheese in the center. Spoon about 2 tablespoons of the elk mixture into the center. Top with diced pickles. Fold the bottom corner up over the filling, fold in the sides, and roll tightly. Seal the edge with a dab of water. Repeat with the remaining wrappers.
4. Cooking Instructions:
- Pan fry: Heat oil in a deep skillet or pot to 350°F. Fry the egg rolls in batches until golden brown and crispy, about 3–4 minutes per side. Drain on paper towels.
- Air fry: Spray the air fryer and egg rolls with nonstick cooking spray and air fry at 390 degrees for 3 minutes per side.
5. Serve the egg rolls hot with the dipping sauce on the side.
